Mongo, Lime and Chia seed Porridge

We cannot say that porridge is the favorite breakfast of the French. With us, it’s more like a good baguette, butter, configure, a croissant and with a cup of coffee. It is true that visually, it is difficult to choose porridge over a good croissant. It looks more like mush (and sometimes a suspicious color…) and in the morning it doesn’t really boost morale.

I discovered chia seeds quite recently and found it magical. The taste and texture is really different from a classic porridge and for me that changes everything. The advantage is that it is rather quick to prepare. Just soak the chia seeds in a little coconut milk and wait a few minutes (you can also do this the day before). Then, it’s up to you to complete it with whatever you like (red fruits, chocolate, almonds, walnuts, apple…).

For this recipe, I chose to garnish my porridge with diced mango, a little lime and a touch of muesli. Nothing very complicated, but the result is there! With this magical breakfast, you can easily get through the morning (it all depends on what time you start it of course!).

Ingredients

Chia seed porridge

  • 200g coconut milk
  • 7 teaspoons of chia seeds
  • 2 tsp agave syrup

Mango and lime coulis

  • 1 medium mango
  • The juice of half a lime
  • 30g of water
  • 30g agave syrup
  • 2 tbsp of vanilla yogurt

Decoration

  • 20g of muesli
  • A few diced mango
  • Zest of a lime

Recipe

Chia seed porridge

  1. In a bowl, place the chia seeds, coconut milk and agave syrup. Stir a little then let stand for 30 minutes, stirring regularly so that the seeds do not stick to the bottom of the bowl.

Mango and lime coulis

  1. Placer tous les éléments dans le bol d’un mixer et mixer le tout jusqu’à obtenir une texture bien lisse.

Decoration

  1. In the bottom of a bowl, place a layer of mango and lime coulis. Add a layer of chia seed porridge on top.
  2. On the surface of the bowl, place a little muesli, a few diced mango, then finish with a few lime zest.
